For the first instalment of Stay Sour, we’re revisiting a great classic: the Amaretto Sour.

Amaretto is an Italian liqueur traditionally characterised by its rich almond-like flavour, subtle sweetness and hints of marzipan. One of its most recognisable expressions is Disaronno, a brand whose origins date back to 1525. Over the years, the Amaretto Sour has become a favourite behind the bar, transforming the liqueur into a refreshing cocktail that balances sweetness with bright citrus acidity.

How to best enjoy it

Rich, nutty and pleasantly tart, the Amaretto Sour is a cocktail that works beautifully as an after-dinner drink, but it’s equally enjoyable whenever you’re craving something flavourful and refreshing.

The key is balance: fresh lemon juice cuts through the sweetness of the amaretto, while a silky foam adds texture and brings the whole drink together.

The Foamer

Aquafab is a great tool for bartenders looking to achieve a silky texture and a stable, velvety foam without the extra steps.

And for bartenders who are a little lazy like me (just kidding!), there’s an even better perk: you can shake your cocktail directly with ice, skipping the traditional dry shake and saving valuable time behind the bar.

Less steps, more efficiency, and a great result in the glass.

What’s not to love?!

Bringing it all together:

  1. Add all the ingredients into a shaker.
  2. Add ice and shake untill well chilled.
  3. Double strain over ice.
  4. Garnish with cherries and a lemon peel (optional).

And remember: the secret to a great Amaretto Sour isn’t simply making it sweet or sour, but finding the balance between the two.
