The Rise of Australian Whisky
Over the past decade, Australian whisky has transformed from a niche curiosity into a globally celebrated spirit category.
The country’s unique climate accelerates the aging process, allowing for rapid flavor development, while distilleries embrace locally sourced grains, native botanicals, and experimental techniques. These factors have helped Australian whisky carve out a distinctive identity on the world stage.
The success of distilleries like 23rd Street showcase a perfect balance of exceptional quality and bold creativity that defines modern Australian whisky.
What Makes an Australian Whisky?
Australian whisky is shaped by its adaptability and strong connection to its environment.
Australian whisky often draws inspiration from Scotch traditions, using double-distilled malted barley in pot stills to craft quality single malts and blends. However, the less restrictive Spirits Act 1906 gives Australian distillers more room for creativity and innovation.
One key difference is the aging process. Unlike Scotch whisky, which requires a minimum of three years in casks, Australian whisky needs only two years of maturation. This shorter timeframe not only accelerates production but also creates distinct age statements and flavor profiles.
Another standout feature is the flexibility with casks. In Australia, whisky casks can be made from any type of wood, not just oak as mandated in Scotland. This opens the door for distillers to experiment with native Australian timbers, adding unique and diverse flavors that make Australian whisky truly one-of-a-kind.

One of the defining aspects of Australian whisky is its innovative use of casks.
Many distilleries experiment with ex-wine casks, such as those used for Shiraz, Tawny (Aussie Port), and Muscat, to add layers of complexity and character. Combined with the diverse climate across the country, which accelerates the maturation process and infuses bold, fruit-forward notes, Australian whiskies have carved out a distinctive identity that stands apart from their global counterparts.
This freedom to innovate, paired with a commitment to local grains, native botanicals, and regional terroir, has placed Australian whisky on the world stage as an exciting and dynamic category in its own right.
About 23rd Street
Crafted with Kangaroo Island barley and distilled in a century-old copper pot still, the Year of the Snake Whisky begins its aging journey in charred oak barrels. It is then matured in prestigious 15-year-old Galway Pipe Tawny casks, adding depth and complexity.
The result is a refined whisky with notes of toffee, dried fruits, and warming spices, embodying the Snake’s symbolic elegance and refinement.

Artistry in Every Detail
The whisky’s packaging is a masterpiece in itself, featuring exclusive artwork by Sydney-based artist Chris Yee, whose Lunar sign is also the Snake.
This personal connection adds depth to his intricate artwork.
Yee incorporates traditional Chinese elements, bold red hues representing Australia’s soil, and motifs of water to represent migration and transformation.
“This project means a lot to me,” says Yee. “The artwork mirrors the Snake’s refinement and the journey of creating this exceptional whisky.
Limited Edition
The Year of the Snake Whisky is limited to 3,600 bottles and available through select retailers, duty-free outlets, and online via Sippify.
This release is not just a celebration of the Lunar New Year but a testament to the growth of Australian whisky and the artistry behind it.
